17 Jun Dining on a Dime – Curry Chicken Club Sandwich
Are you guys familiar with AllRecipes.com? I stumbled across the site a few weeks ago and I’m so glad I did. They have easy recipes for every meal to satisfy every palate. This weekend I made a Curry Chicken Club, based off of All Recipe’s Cajun Chicken Club. It’s basically a chicken club sandwich but with a bit more flavor added to the chicken.
I wanted a healthy side dish, so I included some bok choy with mushrooms.

{heavily season boneless skinless chicken breasts with curry and other seasonings you have on hand. go light on the salt since bacon has enough salt in it. i also added some Baja Chipotle marinade. let sit for at least 30 minutes. grill chicken.}
{top grilled chicken with bacon, tomatoes and other add-ons of your choice. i also threw on a dollup of dill cilantro mayo.}
