Cheap {yummy} Cuisine – Smoked Salmon Salad

The temps are rising and the last thing you want to do is slay away in front of a hot stove. Sometimes, a light (and healthy) bite is great for spring and summer days. A hearty salad can be hard to come by and if you’re piling on the fix-ins at a salad bar, it can be pretty expensive.

Below is a Smoked Salmon Salad I adapted from Jess over at Whole Grain Grub. I love the tanginess of the cheese, the sweetness of the apple and saltiness of the capers. Perfect melody of flavors. I’ve also enjoyed this salad with dried cranberries, walnuts and blue cheese. But you can add the toppings of your desire.

Ingredients
lettuce: $2.99
tomato, red onion, apple: $1 each
capers: $2
cheese: $4
salad dressing: $2
smoked salmon: *I didn’t really like the salmon pictured above, but Trader Joe’s has a great smoked salmon for $3.99 a pack.

Also, if you have stale bread on the counter, toast it in the oven and sprinkle with some garlic for yummy croutons!
