Cheap {yummy} Cuisine – Lemon Garlic Tilapia

Ah summer,  hot days and warm nights. The last thing you want to do is slave away in the kitchen. Luckily, this weekend I made a dish* that was quick, easy and of course, super affordable. Not only is fish healthy for your, but it’s simple to prepare and a great alternative for dinner guests who don’t eat pork or red meat.

I present to you: lemon garlic tilapia with mushrooms and capers.

Ingredients:
Tilapia: $7
Butter: $2
Capers: $2
Mushrooms: $1
Lemons: 66¢
Garlic: $2
Parsley flakes: $1

{sauté mushrooms and garlic in butter and extra virgin olive oil. add parsley flakes and the juice of one or two lemons.}

{add tilapia, cover and cook on medium heat for 12 minutes. add more lemon juice and/or broth if desired.}

{top with capers. *don’t heavily season the fish, as capers are salty.}

{pair with grains and veggies of your choice. i used yellow rice and string beans.}

{dinner’s served!}

This was soooo good. The light sauce went great with the rice (an even healthier alternative would be brown rice instead of the packaged yellow variety) and the fish was nice and flaky.

*I didn’t make the meal, my cousin made it. But I told her I wanted a dish with fish, mushrooms and some kind of light sauce and this is what she came up with.
