Cheap {yummy} Cuisine – Creamy Mushroom Chicken with Couscous

Sometimes I get in a cooking rut and I have no idea what to prepare for dinner. It seems like I eat the same thing over and over (pasta. shrimp. fish. repeat), so I went to the grocery store and just let whatever was on sale dictate what I’d prepare.

The meal that resulted was a simple one (and similar to dishes I’ve eaten in restaurants), but one I had never prepared at home.

Ingredients:
Thin sliced chicken cutlets
Mushrooms (baby portobellos, oyster and shiitake mushrooms)
Heavy Cream
Green Beans
Couscous
Cilantro

Instructions:
Cook chicken and mushrooms in a skillet with olive oil, approximately 10 minutes. Add desired amount of cream and simmer until the sauce thickens. Cook couscous according to package directions. Steam vegetables (I love the veggies that you can cook in the bag). Garnish with cilantro.

Results:
The couscous was a bit watery and the cream sauce only added to the watery-ness (oh well, I’ll do better next time). Other than that, I love this meal. Simple and easy but pretty nice to look at.

Price breakdown:
$12.50 for all ingredients, which yielded 3 healthy servings. That’s just $4.16 per serving!
