Vision Board Party on a Dime

Today I’m deviating from the normal budget fashion and thrift tips to tell you guys how I spent my weekend. My friends and I hosted a vision board party. I’m a serious believer in the power of words and positive thoughts so my girl Danielle, The Frugal Fatshionista, and I decided to get together with the girls for a night of sharing our future hopes and goals with one another.

And of course we had a great time without spending much cash. We set the scene at Danielle’s place. We had affordable eats {everyone brought something to snack on and some takeout from Domino’s} and items like plates, forks and even plastic wine glasses were from the dollar store. Seriously, the dollar store is my go-to place for party decorations and settings.

Budget Recipe: Sweet Potato Beignets

I’m a sucker for anything that’s fried and/or sprinkled with powdered sugar. Seriously, eating funnel cake is my favorite part of attending amusement parks or carnivals. So when I came across a recipe for sweet potato beignets, I was intrigued. Beignets are a New Orleans staple and the sweet potato twist seemed fun. I deviated from the original recipe by omitting the ricotta cheese and using milk. You may need to add more flour to give the mixture a doughier consistency so they can be formed in to balls.

Chicken. It’s super affordable and can be prepared tons of different ways but most people get stuck in a rut in their preparation of the meat. I checked out Kitchen Daily for a new way to enjoy my favorite white meat and I landed upon a video for Chicken Marsala, which I’d never tried before.

The ingredients were pretty simple and affordable and it looked easy to prepare, so I gave it a shot.

Budget Recipe: Olive Stuffed Garlic Knots

I’m obsessed with Sunny Anderson on the Food Network. Her show, Cooking for Real, offers scrumptious recipes that even a novice can whip up. A few weeks ago she made Garlic and Olive bows {recipe}. Basically, they’re garlic knots but with chopped olives in the middle and in the shape of a bow, instead of a knot.

This is a great, super simple treat to pair with pasta, instead of doing the typical garlic bread.
