Budget Recipe: Chili

With the cooling temps, sometimes you need a warm home cooked meal to keep the chill away. Soup is great, but maybe you want something a bit heartier. That’s where chili comes in. It’s a one pot, easy to make recipe that uses affordable ingredients. And it tastes even better as next day leftovers for lunch or dinner.

  • Brown ground beef* and drain excess fat
  • Add tomatoes {juice included}, drained beans and chili powder mix*
  • Bring to a boil
  • Allow to simmer for 10 minutes or until the chili reaches your desired thickness
  • Top it off with your choice of cheese, sour cream, scallions, onions, jalapenos or whatever tickles your pickle

*Not feeling red meat? Substitute with ground turkey or chicken. For a vegetarian option, just stick with the tomatoes and beans {which is quite filling on it’s own} or add tofu.

*Instead of a seasoning packet, you can make your own mix with chili powder, cumin and cayenne. This allows you to control the sodium and the heat level. If you do use a chili seasoning mix, watch for the sodium levels. Some of the extra hot and spicy packs have a third of your day’s recommended intake.
